Black Forest Pancakes

‘Britt those were absolutely delicious!’ That is the reaction I received for these pancakes so I think they’re legit as a mouth-watering day-starter. Quick fact about myself: Cherries have always been my favorite food. I adore them. Once upon a time growing up even when we were sugar-burners, my favorite flavor of candies were always the red cherry flavored ones. I adore just the smell of cherries. Cherry lotion. Cherry candles. It almost ties my favorite scent (coconut). Naturally when my nephew, Gavin is present for breakfast I want to think of something creative and yummy that will get the praise of a 5-year-old (a guarantee) that it is a winner. Plus it was so easy. The recipe made the three medium size pancakes you see before you.

Black Forest Pancakes

  • 1/4 cup almond flour
  • 2 tbsp cacao powder
  • 2 egg whites
  • 2 tsp raw honey or maple
  • 1 tbsp coconut milk
  • Cherries, pitted and diced
  • Dark Chocolate (I used an 86%, but click the blue link for suggestions from Marks Daily Apple)

To Make: Mix together all the ingredients minus the chocolate and cherries. Warm a skillet or griddle on medium heat. Spoon mixtures of pancake into the skillet. Flip when it starts to bubble a little. Layer. Melt the chocolate before hand and put cherry, chocolate, pancake, cherry, chocolate, pancake, cherry, chocolate, pancake. My mom has not stopped raving about how amazing these were, so if you’ve got picky kids or just want a breakfast indulgence give them a try!
